300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Cocktail (makes 850ml, serving 10)

400ml premium vodka

150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Citrus Syrup: Place all the items into a saucepan, bring to a simmer, agitating until the sugar dissolves. Then, take off the stove allowing it to reach room temperature entirely. Pour into an sterilised bottle, seal and refrigerate it chilled, it will last for around one month.

To make Batch Mix: Combine the specified liquids into one big jug, leave to sit for one hour, then filter it preferably using muslin, making it perfectly clear.

For serving: Pour 85ml from the cocktail base to a cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Filter into an chilled martini glass or equivalent, top with some cranberries and complete it with a quick spritz of the essential oil above the glass.
